I'm sitting here 100 miles from Death valley, and I'm sure even round here you will want a thermostat in the oil cooler path, the high today is 56 degrees F (13 C). Great driving weather, but no risk of overheating!
I have Morgan Custom's oil cooler for summer driving, this includes a mechanical thermostat so that it only kicks in when needed. I once drove through Death Valley in the +8 with the roof down it was 48C (118F), interestingly the radiator fan didn't come on unless I slowed down or stopped with the temperature gauge showing no more than 120. The driver however was casseroled for a couple of days.

The driver however was casseroled for a couple of days. Is that why you have a can of Baked Beans as your avatar to this day?

Morgan Custom's oil cooler kit comes with a thermostat like this (below). long trips on hoy days in stop and go traffic may cause the engine to lose some of its top power/efficiency. I imagine the 80s air cooled 911s had the same problem. (it's mostly about keeping the engine in the prime "optimum zone" than about cooking the engine. morgan custom also sells an oil heater for the oil tank to heat the oil up before riding on a cold day!). https://www.scparts.co.uk/sc_en/oil-stat-14749.html

The driver however was casseroled for a couple of days. Is that why you have a can of Baked Beans as your avatar to this day?  it does not take much for our plus 8 for the fan to kick in, but who knows if our thermostat is the same as yours (it is a Morgan after all)

This is the set up I have for cooling. all the oil goes through the cooler, but because of the location, it is not really an issue during a cold day. The thermostat kicks the fan on when the oil gets about 210 or so. I have a red light in the cockpit to indicate the fan, and a thermostat as well. Neat install... but perhaps you need a good old hood scoop to feed it fresh air, then some air out louvres in the bonnet

it does have louvers, but yes getting more under the bonnet it a good idea. I thought of sucking air from the passenger foot well could even reverse the fan in the winter to heat the foot well. I would hate to have to repaint if I installed an air scoop
