I see that a number of people (Williams, Allon White, Sifab, Mulfab) offer a lower profile sump for the 3.0 Roadster. Any recommendations?

SiFab and Mulfab are the manufacturers. I would probably go to Simon as he's always given me excellent service and workmanship.

Allon Whites did mine when I bought the car off them. It is essential as otherwise you will hit the sump

John's correct. I did! Mulfab sump fitted as a result.

The skid plate is essential.
I know of three Roadsters with instant oil loss via cracked sumps - hitting boulder under grass in field/hitting speed bump in roadway/hitting gate stop exiting parking area.

Cheers

Skid plate or an extra 20mm clearance?

There is quite a price difference between the slimline sumps that I came across. Any qualitative differences between them?

I didn't bother with the skip plate on my previous Roadster as it only reduced speed hump clearance, but I did fit the shallow sump from Mulberry, when Simon was there, so he most likely did the welding

IIRC Simon crack tests the donors before milling, so you won't get a duff 'un thumbs

Yes the heart stopping initial drama of hitting the skid plate or something less sacrificial will be the same so best avoided.
