I had an issue with the gauges misting up on the Coupe but the problem is mainly due to the garage not being well vented. Once I fixed this and a breeze was getting through the problem went, could it be damp in your storage area resulting in this issue being more pronounced?
I agree re the setup for a new engine. No wide throttle openings or high or steady revs for the first 200 miles. Gradually allow the revs to rise but again on light throttle openings for <500 3500/400/4500/5000 per 50 miles. No big throttle openings until 1000 miles are out of the way. Most of this is to protect piston ring/liner stuff but in truth is probably no longer needed with modern casting and material quality. I still do it as I like to think I am helping.
