Weird...we have virtually identical cars and none of the dials ever mist up.....
Is it because the garage, and thus the car, is part of the house and the temperature never falls below 10C?

It could be - but I have a dehumidifier running out in my barn... the barn is oak and not damp... it retains a little heat even in hard frosts.
Mine will typically mist when the sun is behind me and hits the dash.
Did your Roadster's dials mist?
