Somewhat related to the insurance and not totally a hijack, if in CA you only need to have a standard license to drive a M3W, what happens when driving out of state and you get stopped and in that state they require the "M" endorsement? Do you get a ticket for driving without the correct license?

The same would hold true here. You live in IL and riding a motorcycle without a helmet, no helmet law in IL, and you cross over into MO, a helmet law state. If you're not wearing a helmet in MO, you get a ticket.

Now back to the insurance part of this. "What if" you're driving in NV, OR etc and they require the "M" endorsement AND you're in an accident. Because you don't meet that state's minimum requirement to drive, will your insurance company renege on the coverage because you do not meet the "legal" requirement to be driving in that state?

With states now inventing categories for the Slingshot, Elio and M3W, like cyclecar etc, the laws are all over the place.

If you ONLY drive in CA, you're probably safe, but I would error on the safe side and have an "M" endorsement just in case. Cops don't always know their own new laws and these kind of trikes are not all that popular yet.

I hope you have many miles of smiles with your M3W...
